I’m a minced beef addict, there we go I said it. I love bolognaise (as demonstrated HERE) and am always on the look out for something quick to make for dinner. I loved the idea of chilli but I have a severe dislike for kidney beans. It isn’t the taste and I often use them blended in soups but the texture. I hate the powdery taste when they are bitten into. So much so the thought is just making me shudder! So I decided to try it with a tin of baked beans and came up with this…
Serves 4
1 large onion (I like the sweetness a red one brings to the flavour but use whichever you have), diced
1 pepper, diced
2 carrots, diced
2 cloves of garlic, crushed
500g extra lean minced beef
1 tablespoon hot chilli powder
1/2 teaspoon dried chilli flakes
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon salt
1 teaspoon dried basil
1 400g can baked beans
1 400g can chopped tomatoes
1/2 pint beef stock
Dash Worcestershire sauce
Method
Spray a large saucepan with oil spray and brown the onion, garlic and chilli flakes until the onion has softened slightly.
Add the pepper and carrots for around 5 minutes before adding the minced beef, herbs and spices.
Cook until the beef is browned then add all the other ingredients. Give it a good stir, cover and simmer for approximately 30 minutes until thickened.
Serve with boiled rice and tortilla chips.
