There is very little that a decent slice of cake cannot cure. I have been known to order cake slices for delivery when I have had a particularly tough day, and that hasn’t changed for me in lockdown as I continue to work and balance life’s troubles. With lots of independent food and drink businesses turning their hands to delivery (you can find those that deliver to Stockport in this previous post) you can find some real gems offering something a little different, and that is where Torta Cakes by Ginnie Porter comes in.
Ginnie has created five signature cakes that are available to order for delivery to your door. Lovingly named after your favourite far flung holiday destinations, there is a lovely selection of fruit and chocolate options as well as vegan options too. My love of Thailand means I was so very tempted by the Koh Lanta with a lemon drizzle sponge, lemon buttercream and coconut curls. I couldn’t get over my peanut butter addition though and popped an order in for the San Diego.
Beautifully boxed with a gift tag, my San Diego cake was a thing of beauty. Moist vanilla sponge is sandwiched with strawberry compote and buttercream before being decorated with peanut butter frosting. The piping was so pretty that it would be the perfect birthday surprise for a loved one during lockdown and just screams to be enjoyed with a brew.
The cake is rich and dense yet kept perfectly moist with the compote and creamy peanut butter frosting. It was so moreish that the whole thing had been finished by the end of the weekend and I had to wrestle the last slice off my Mum. We will definitely order again and I have got my eye on the Toronto; a chocolate fudge sponge with cherry compote and a pistachio frosting. I adore pistachio and cherry so it has my name written all over it!
